The manufacture of shrimp was carried out by planning in the regions of Indonesia, especially the coastal area where the source of raw materials in the form of shrimp, rebon, and abundant fish. Making shrimps utilizes the work of indigen microorganisms that are naturally found from the raw material for shrimp or fish used. The difference in environmental conditions will make a difference in the growth profile of microorganisms, and resulted in differences in chemical compounds and metabolites contained in shrimp. To overcome these problems, SithItb has conducted research to standardize the manufacture of shrimp paste with the goal so that the produced shrimp paste has good quality and maintained in each production process. The results of this study are intended as a form of service to the public to increase welfare in shrinkage areas of shrinkage. This activity involves several preparation stages before the training begins. The manufacture of standard operation procedures has been conducted since 2017 and dissemination is carried out since 2017-2018 through community service activities. This SOP comes from previous studies that have been made at the ITB Microbiology Laboratory since the end of 2016. Keywords: Microorganism Growth, Terasi, Standard Operation Procedure
