Wheat flour is one of the foods whose use is very large in the community, especially in Indonesia. The availability and content of high carbohydrates allows cassava to be flour known as fermented cassava flour or fercaf flour. The purpose of this study developed an early air heating system for cassava chips drying with the drying method of sun. This method uses four stages of the design of the heating system, namely, the calculation of the temperature of the air output, the preparation of the dryer based on the design, the fermentation stage and the drying of cassava chips, and in the final stage through the level of testing the level of the oven drying. Testing Whiteness Index is done using calorimeter. Designing the air heater system using a finheater type heater with installed power 2000 w, the use of preaheaters accelerate the drying process without affecting quality The resulting fercav, variations of baffles provide better results after passing water content and whiteness index tests.
