Indonesia is one of the world banana exporting countries. But the ability of Indonesian banana exports is still inferior to other Asian countries. The process of safeguarding the quality of bananas from planting to distribution to consumers is very important in the production process of bananas. Short banana fruit period after harvest is an obstacle for every banana manufacturer. Nanotechnology opens alternative solutions for this problem. The use of nanomaterials with the principle of edible coating using polysaccharides can extend the fruits. The potential of Edible Coatings originating from the Indonesian Sea Ocean Source is very large. The use of cheap technology based on Indonesian natural wealth with raw materials that is easily obtained and environmentally friendly is very necessary to deal with post-harvest constraints experienced by farmers. The activities carried out on the community service program are applications from the results of shared research that have been carried out by ITB researchers, various disciplines (biology and chemistry), which also involve students in the final assignment of the S2, with the basis of bio-material modification, low cost, and materials Local standard. In this activity, the team will transfer multiple knowledge and bio-material use methods that are biodegradable as an alternative to fruit maturation, namely: (1) the advantages and benefits of bio-material modification-based technology in plants and vegetable production for health and the environment, ( 2) CARGENGENAN APPLICATION as a banana fruit that can delay maturation, and (3) the efficiency and effectiveness of carrageenan performance in reducing the production costs of agricultural products.
